Rice & Beans & Fibre Love ❤️

Don’t Make This Recipe

Trust me, don’t make this recipe. It makes getting more fibre into your diet way too easy. You’ll end up having better heart health, blood sugar regulation, and GI function – all while feeling way better. It will take away 90% of your reasons you don’t get enough fibre. And what happens then? You’ll turn into some weirdo on the internet talking about fibre. Social pariahism undoubtedly ensues. So, again. Don’t make this recipe. You’ve been warned.

Ingredients

  • 2 Cups Rice – I like Basmati
  • 2 Cups Split Red Lentils
  • Chicken Stock
  • 2 Cans Drained Beans – I usually go Pinto & Black
  • 1 Can Diced Tomatoes
  • 1 Diced Onion
  • 1 Tbsp Olive Oil
  • Spices ~1Tbsp Each: Paprika, Garlic Powder, Chili Powder

Fancy Cooking Instructions

  1. Dice onion and simmer in olive oil for 1-2 minutes in large pot
  2. Reduce heat to low and add rice and spices, stirring for 1-2 minutes
  3. Add beans, diced tomatoes, and lentils, then mix up
  4. Pour in chicken stock until it covers the top of the rice by ~1cm
  5. Simmer covered on medium low, stirring every few minutes so your delicious stuff doesn’t get burned to the bottom of the pot
  6. When liquid is almost all absorbed, check rice and lentils for doneness, adding more water and continuing to cook if necessary
  7. Once done, I like to let it rest covered off the heat for at least 5 minutes
  8. Eat with everything.

Personally I eat 1.5-2 servings for each meal, meaning I get 6-8g of fibre just from this pile of love. It’s uber convenient in the morning with eggs, as a side with chicken or steak, or just as a quick snack on the go with some hot sauce and salsa verde. But remember, don’t make this recipe.
